3. Gluten is a mixture of  proteins, termed prolamins and glutelins stored together with starch and endosperm of grass-related grains. The gluten free diet is a treatment for the celiac disease. Some people who don’t have celiac disease also may have symptoms when they eat gluten. This is called the non-celiac gluten sensitivity. People with non-celiac gluten sensitivity may benefit from gluten free diet. People with celiac disease must be gluten free stopping them from the symptoms and other complications.
